Turkey Lettuce Cups Recipe
A couple of weeks ago, I found myself not very hungry but I knew I should eat a little something. I rummaged around my kitchen and came up with ground turkey and some romaine lettuce. I also had green onions, garlic and onions on hand. I decided to add a little frozen spinach and canned corn for color but you can of course substitute for anything fresh you have. I would have loved to spice it up with a little mirin but I was out of it.
- half pound of ground turkey
- 3 cloves of garlic
- 1 onion
- 2 stalks of green onions
- 1 cup frozen spinach
- half can of corn
- head of romaine lettuce
After adding just a bit of canola oil, I started browning my diced onions and minced garlic. After about three minutes, I added in the ground turkey. I added a splash of soy sauce and a dash of siracha. Just as it finishes cooking, add in the spinach and corn.
If I had some sort of nut or seed, I would have added it for a nice crunch. Pumpkin and sunflower seeds would work. Some would use fried noodles but I think those are just empty oily carbs.
I arranged my leaves around a plate but you could just serve it in a bowl with the lettuce on the side. It’s not as pretty though!


Yum! I’ve done variations w/ turkey, black mushrooms, oyster sauce, water chestnuts, onions, garlic, soy sauce and spice also. I’m so bad at writing recipes though. I just throw stuff together.

Mmm, oyster sauce is so yummy! I love just scrambling up egg and eating it with oyster sauce and rice.
Yeah, this recipe writing business is very hard! I have to reverse-engineer the recipe.
