Drago Centro: Tomato & Tripe
a bite of tripe
The tasting menu at Drago Centro has already changed from last month. Now Chef de Cuisine Ian Gresik is offering a 6-course tasting menu of tomato-inspired dishes including this wonderful tripe dish, La Trippa. Fortunately for me, I was able to order just the tripe (now plotting when I can go for the tomato tasting menu!)
My friends weren’t into the offal so I had this dish all to myself. Not to worry, they stuffed themselves on the always affordable bar menu which includes lovely oysters, pizza and calzones. Oh, and of course my favorite Kobe sliders.

To go with my meal, I had my favorite Verona Swizzle as well as Head Bartender Jaymee Mandeville’s bourbon old fashioned. Don’t forget to vote for her for LA’s Best Bartender. Also nominated is Brendan at Drago Centro. I would love to see them both in the finals!
