Palm Springs: Calamari and Bun Bo Hue at Pho 533

I was in Palm Springs for a couple of days last month and one of the suggestions I got was for Pho 533 near our hotel, the Saguaro.
We started out with the calamari which our server assured me was one of the best dishes of the house with bright eyes and a sturdy nod of assurance. I took that as a good sign. The calamari was indeed lightly fried and not too heavy. The squid was toothsome and not at all chewy. Score one to our server.
My friend had the beef bun mi which sounded right for the hot day. It’s essentially a noodle salad with plenty of greens and beef.
I decided on the bun bo hue, one of my favorite soup noodles. The spicy beef soup wasn’t too spicy which was probably good for me but sometimes you want a good sweat. Or maybe not considering how hot it was outside. For the time being I enjoyed the huge chunks of beef and slippery noodles.
Pho 533 turned out to be a good choice for someone who always craves Asian food, particularly noodles, when away from home.
