Hollywood: New Chef at Papilles

Neighborhood darling Papilles has recently promoted Chef Jordan Rosas to run the kitchen. He takes over for Chef Tim Carey who’s over at Lost at Sea, another restaurant owned by Santos Uy.
Papilles has a prix fixe menu and I recently checked out the winter offering. The menu is subject to change but this gives you an idea how creative Chef Jordan is.
We started with the amuse bouche, a small cup of celery root clam chowder with lovage oil. I loved it and wished I had a full sized bowl of it.

For the first course, we had the winter squash salad which featured delicata squash, arugula, honey poached cranberries, gorgonzola and candied pecans.

Hokkaido scallops
My favorite dish of the night were the Hokkaido scallops. Such tender shellfish with kohlrabi and grapefruit. The ginger-lemongrass emulsion was fantastic.

I also enjoyed the duck breast from Mary’s farms. It came with carrots, salsify and chard. I love that duck is becoming more of a thing on LA’s menus.

And for the last course, we had a Meyer lemon cheesecake for dessert. I was impressed how light it was with the lavender and chamomile honey.
Papilles is in good hands with Chef Jordan. Every neighborhood deserves something as special as Papilles.
