Ugly Drum’s Pastrami Project Tour at Mendocino Farms

Ugly Drum pastrami

Ugly Drum pastrami

Last month I had a chance to try the Ugly Drum pastrami as part of their pop-up at Mendocino Farms. Now everyone will have a chance at this fantastic pastrami. Ugly Drum will be hitting up various Mendocino Farms during April and May.

At the popup, I got to try more than just the pastrami. We started with the wonderful pickles plate. I loved the seasoned nuts as well. Pickles included green tomato, cauliflower, rhubarb and baby squash.

Then we had the pimento toast with cayenne rubbed turkey. I enjoyed the English peas and baby pea shoot salad atop the toast. It lightened up the pimento. The popup dinner also featured beer pairings with Saint Archer. The White Ale went great with this dish.

Then all the panties dropped when the pastrami and sausages hit the table. The pastrami is made from brisket that’s cured for days and smoked for 12 hours. It’s a Texas dry-rubbed style. Usually brisket is smoked for 6 hours and then finished elsewhere. Ugly Drum takes it to another level by smoking it for 12 hours.

The pastrami sandwich that’s hitting the tour is this same pastrami. It’ll be served with an apple coleslaw and the moppin’ mustard. I got a bottle of this stuff and I do indeed like the slightly tangy mustard on the brisket and sausages.

We tried the smoked meats with Saint Archer Pale Ale.

Mendocino Farms has always had great sides. I hope they’d consider making Ugly Drum’s potato salad with haricot vert.

For dessert, we had the cocu-be cheesecake and kala-zu icebox dessert from Creme Caramel LA. The coconut marascapone cheesecake had little bits of ube (purple yam), macapuno (jellied coconut) and blondie bites. I loved the graham cracker yogurt crust.

But the icebox dessert– oh man! I kept eating it even if I have a 3-bite dessert rule. The yuzu chiffon cake was made tres leches style with a layer of kalamansi curd and a bruleed dollop of Italian meringue. I’m plotting when to get this again.

Eventually the pastrami will make it to Mendocino Farms’ permanent menu beginning in the Fall after they build in a smoker. In the meantime, check out the pastrami tour at the following locations:
