DTLA: New Chef Johnny Palomino at Mignon Wine Bar
Mignon is launching a new market menu with Chef Johnny Palomino tonight, Tuesday, February 2nd. Chef Palomino comes from Mignon’s sister restaurant Papilles. The three-course menu ($30) will be inspired the seasons. I had a chance to check out a preview last week and was treated to an exciting night that epitomizes cooking from LA’s farmers markets.
We started with the Tai snapper ceviche laid out on two rounds of jicama and guacamole. We learned Chef Johnny comes from a fine dining back ground and has cooked in quite a few LA kitchens. He also uses elements of his heritage as evidenced by the Latin flavors of the ceviche.
Next we had a pork cannelloni. The pork was so succulent and reminded me a bit of carnitas. Topped with cilantro and peppers it resembled enchilada but of course, the softness of the pasta belied that.
And what’s a great tasting without dessert? Chef Johnny wowed us with his arroz con leche. He mentioned the rice was chewier than you would expect because that’s how he liked it– but it definitely worked and served as contrast to the soft ice cream and creamy caramel. I also liked the tang of the orange wedges.
The market menu will be available 2-3 times a week in the first few weeks of Chef Johnny taking over Mignon’s kitchen. And don’t forget lunch with Cento Pasta Bar.(213) 489-0131
