Bar chef Matthew Biancaniello is back at The Library Bar at the Hollywood Roosevelt hotel in Hollywood on Tuesdays and Wednesdays until June 26.

mezcal margarita with Manila clams


On the evening I went, Matthew was serving mezcal margaritas with Manila clams which turned out to be my favorite drink of the night after the passion fruit uni shooter. I also really enjoyed the old fashioned with scallops (not shown).

Morel mushroom Manhattan


We also had the most spectacular Manhattan with morel mushrooms. It was served with vermouths with Asiago cheese, cornichon and proscuitto and unripe grapevines. The three different vermouths are meant to be sipped after a sip of the Manhattan for a full sensory experience.

If you’re wondering about all these savory notes in the drinks, that’s because Matthew is a true bar chef with a culinary background. They’re all very creative drinks and I love them.
