TusCA at the Hyatt Regency OC

This week I found myself down south, past the Orange curtain, in the land of the Mouse. Near Disneyland lies the Hyatt Regency Orange County with their new TusCA restaurant.

I found it fascinating TusCa supplements the kitchen headed by Executive Chef Sayed Moalemi and Chef de Cuisine Laura De Martin with herbs grown from their rooftop garden.


We started with antipasti. Some cheese were imported from Italy and everything was super fresh. I loved the honeycomb, asparagus, dried figs and caponata.

After the antipasti, we had salad and pizza. Chef De Martin was previously with Pizzaria Mozza and her pizza had a nice chew. I enjoyed the roasted tomato in the salad.

The gnocchi was made from bread instead of the usual potato. Instead of a dense gnocchi, I was surprised how delightfully light they were. The brown butter and sage cheese veloute was so decadent.

Lately I’ve been obsessed with “a little piece of fish.” Halibut is one of my favorite fish and although simply seared, it was very flavorful with thyme, fennel and the salad was perfect side.


We were presented with affogato al cioccolato, a dish of vanilla ice cream, chocolate shavings and espresso. Simple and delicious!

If I ever find myself down south again, I know where to head for fresh food and great pizza.
