Jackson Hole, WY: Eating Clean at Lotus Cafe
After Utah, we hit Jackson hole, Wyoming for a couple of days. When we got to town, we decided a healthy lunch was in order. I found Lotus Cafe.
I was attracted to it because I noticed they had noodles, kale, quinoa, bison and all sorts of goodies. I normally shy away from places that seem to have a lot going on but they got good reviews and it was worth a shot. I was surprised they served alcohol. And not just any alcohol but they had an interesting drinks list. Any place selling Fernet-Branca for $4 a shot was all right with me.
However, despite being so thirsty in Utah, I didn’t feel like a lunch cocktail. My roadtrip buddy obliged me with getting a drink. She opted for the watermelon mojito. Maybe I should have gotten a drink. Who’s going to try the tea and coffee cocktails with me? I was most intrigued by the Tiger Rye (Old Overholt rye, chai, vanilla syrup) and the Aztec Hot Chocolate (reposado tequila, Cointreau, chocolate sauce, hemp milk).

But I decided to eat clean. I started with a Greek Salad. The vegetables were very fresh and it was a nice little salad. I enjoyed the dressing quite a bit and made sure I ate every bit of the feta.
My friend decided she wanted to eat healthy too after doing battle with the hambuguesa and Buffalo chicken dip the day before. While I liked her food and I generally like falafel, I couldn’t wait to dive into my bison burger.
I was originally going to get the bison pho but it was one of those super hot days in Jackson with no cooling winds. I decided that the bison burger would do. On this road trip we were going to try to eat local game. I suppose I shouldn’t have gotten the Greek salad because I decided to get the salad as one of my two sides. I also chose the steamed kale as my other side.
Despite the weird crumbly square sandwich bread as a bun, I really liked my bison burger. The grilled onions, kimchi and sauce were really good. I ended up dipping my kale in the sauce as well. I ate the kimchi slowly and pronounced it authentic. I somehow thought it’d be too sweet but it was good.
Lotus was the start of some great meals in Jackson.
