DTLA: New Chef at Corkbar
Fernando Darin took over the kitchen at Corkbar a few months ago. Most recently at The Kitchen in Downtown, which closed before I could visit, he has upgraded the menu but kept the perennial favorites at Corkbar– I think guests would faint if the gourgeres went away.
I wasn’t feeling particularly hungry but I did want to try a couple of things. I decided to get the fried green tomatoes and squash as well as the crab cakes. The fried green tomatoes were great. I really liked how different this presentation was with the pureed squash as well.
The crab cakes had quite a bit of crab though I felt the spicy aioli could have been a bit spicier. I’d get it again though because a zip of the very fresh lemon juice brought out the natural sweetness of the crab.
My friend had the grilled cheese which she pronounced better than the previous version namely because the bread selection was improved. She liked the fact it’s now with brioche. However, she thought the dressing for the salad was too acidic.
We’re glad to see Corkbar has remained a steady neighborhood favorite. I look forward to seeing what new dishes will make it to the menu.
